Assignment: Board sought new uses for
their commodity. Developed formulations, test protocols and recommendations
to make the food "fat replacer" in processed meats. Result:
Meats had improved yield, reduced fat, additional antioxidants
and natural acid that made meat safer. Product is being sold nationally.
