Assignment: Developed culturing and flavor technologies to develop
fat-free sour cream and related products. Developed ingredients,
specifications and finished products, then audited and selected
contract manufacturer. Product is top seller in category and
market.
Client: Specialty cheese products manufacturer
Assignment: Created business that developed new custom
ingredient. Helped develop overall strategy and tactics, including: designing
and implementing programs with R&D department, and developing
operations, marketing and technical sales and service. Developed
functional ingredients for use in dairy proteins and other dairy
products, baked goods and processed meats.
Client: Major Asian confectionery and dairy foods company
Assignment: Assisted client in developing super-premium ice cream
products: Designed and constructed plant, selected equipment,
developed operations manual and quality assurance program, started
operations, and advised on cost reduction and avoidance. Also
advising on new product introductions and HACCP/TQM programs.
